Alfalfa for Health and Weight Loss

One elderly lady ate alfalfa alone for two years and survived well. It is given to cows as a healthy winter feed and it is easy to grow your own (see below). Can be used as a salad accompaniment or in sandwiches just like lettuce but more tasty and nutritious. (See recipe below)

Vitamins A, B, C, E and K, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc
Carotene, Chlorophyll, Amino Acids, Trace Elements, Protein: up to 35%

Grow your own Alfalfa:

1. All you need is a packet of alfalfa seeds, one jam jar, an elastic band and bit of an old stocking or pair of tights (enough to cover the jam jar top)

2. Place one tablespoon of seeds in the jar.

3. Cover with piece of stocking and secure with elastic band.

3, Pour water through the stocking (enough to cover seeds) then tip water out.

4. Repeat this once a day (making sure you shake the jar so all seeds get watered) until the seeds have sprouted and keep the jar on a window sill..

5. Once the all the seeds have sprouted it is ready to eat. This can take around five days or so.

That's all there is to it, a cheap, easy, nutritious alternative to lettuce and you have grown it yourself so you know it is organic!


"Nat's Nutty Seed Salad"

Try out this recipe using alfalfa as a healthy nutritious snack or accompaniment to any meal:

Ingredients:
1. One to two handfuls of de-husked alfalfa sprouts (pick up a handful and shake excess seed husks lose. They won't harm you so don't worry about removing all of them)
2. Tablespoon of each of the following: (all optional according to taste)
a) Pine nuts
b) Pumpkin seeds
c) Sesame seeds
d) Poppy seeds
e) Golden Linseed (High in Omega3 - good for menopausal problems)
e) Oatmeal
f)  Nuts of your choice, walnuts, almonds, chopped mixed nuts
3. Half a tin of each or some of the following: (all optional according to taste)
a) Tinned sweet corn
b) Tinned mixed pulses
c) Tinned chick peas
g) Mixed nuts either whole or chopped (alternatively one tablespoon each of preferred nuts. NOTE: some nuts are very fattening so if weight loss is important reduce the amount)

 4. Two large tablespoons of each of the following: (all optional according to taste but the addition of one is required to sweeten)
 d) Sultanas or mixed fruit
 e) Chopped dried apricots
 f)  Dried blueberries

 5. The following is also optional, add all or as many as you wish:
 a) One eating apple peeled and chopped
 b) Juice of half a lemon
 c) Any chopped salad ingredient can be added such as tomatoes, cucumber, hard boiled egg etc.
 d) Pinch of mixed herbs
 e) Pinch of sage (also good for menopausal problems)
 f) Ground black pepper to taste
 g) Natural low fat bio culture yoghurt. Enough to cover all ingredients when mixed
 h) Two teaspoons mustard (Any according to taste)
 i) Dash of lemon juice
 j) Dash of vinegar

To make more of a complete high protein meal add some diced cooked chicken (No skin), hard boiled eggs, low fat cheese or tinned oily fish or tuna....

Method:
Place alfalfa in a medium size salad dish, add all the other ingredients and mix. You can mix and match any of the above ingredients and don't have to be exact with measurements and can even add your own according to what you prefer or have in the kitchen cupboards but make sure they are unprocessed, fat free and healthy. Takes about twenty minutes to prepare. Eat as you would any other salad and enjoy :o) Keeps for two/three days in a sealed Tupperware container in the refrigerator and is a great highly nutritious snack anytime of day or night!
